By implementing selective hand-picking techniques, we guarantee that only the finest cherries make it into our coffee, minimizing the risk of mold from the outset.

 

2. Meticulous Drying Practices

Drying is a critical step in preventing mold growth. We insist that our coffee cherries are dried on raised beds, allowing for optimal airflow and preventing direct contact with the ground. This method ensures even drying and reduces the chance of contamination. Additionally, drying processes carried out in well-ventilated, shaded areas avoid the pitfalls of overexposure to direct sunlight, which can lead to uneven drying and bean cracking.

3. Careful Handling and Transportation

During transportation, coffee beans are at risk of exposure to fluctuating temperatures and humidity, which can create ideal conditions for mold growth. To prevent this, our coffee is transported in moisture-proof, hermetic GrainPro bags, and care is taken to avoid temperature extremes.

Roasting is where we bring out the best in our beans, and it’s also where we take a final stand against any potential mycotoxins. By roasting our coffee at the optimal temperature and duration we significantly reduce any trace amounts of mycotoxins like ochratoxin A. Our roasters are meticulously cleaned and maintained to prevent cross-contamination, ensuring that what ends up in your cup is pure and safe.
